At Firedoor, the open-plan kitchen is entirely powered by wood and everything is cooked to order. Guests have a clear view of the action. Burning a variety of woods daily creates embers which are then used to cook in a way that enhances the natural characteristics of the ingredients. Hastie draws extraordinary flavors out of meat, fish and vegetables using only a wood fire, a grill and his unique skills.
